A quick method for the detection of mycotoxins in grains and an acoustic device for the evaluation of the quality of porous food systems in production.

ACOUSTICS project outcomes – the project has proved the usability of the acoustic method both by acoustic wave transition and by reflection in the creation of a quick and cheap method for the detection of the following mycotoxins: (i) deoxynivalenol (DON) in wheat and (ii) aflatoxin (AFT) in corn, as well as (iii) the evaluation of the structure/texture of porous food matrices, such as bread, biscuits, extruded products, and/or their changes during storage.
Specific knowledge gained during the ACOUSTICS project allowed to create specialized software which was installed during the implementation of the acoustic device prototype.
